- I found these recipes in one of my cookbooks - I havn't tried either one but
- they sound like the potato and bacon recipe requested.

- KUGELIS (Potato Pudding)
- 10 large potatoes, grated
- 1 medium onion, diced fine (optional)
- 5 slices bacon
- 1/2 C. hot milk
- 3 eggs, lightly beaten
- 2 tsp. salt
- 1/4 tsp. pepper

- Cut bacon crosswise into narrow strips and fry until
- crisp.
- Mix potatoes and onion (if using onion) and put into a
- lightly greased baking pan (size wasn't specified in
- this recipe, but I'd guess a 2 qt. casserole or a 9 x 13"
- cake pan).
- Pour bacon and fat over potatoes and stir. Stir milk,
- eggs, salt and pepper into potatoes.
- Bake at 400 degrees F. for 15 minutes; reduce heat to
- 350 degrees F. and bake another 45 minutes or until
- golden brown.

- POTATO "KUGAL"
- 5 large potatoes, grated (squeeze off excess water)
- 1 large can Pet milk
- 4 eggs
- 1 small onion, diced
- 5 strips bacon, diced
- 2 Tbsp. butter
- salt and pepper to taste

- Brown bacon and onion in butter in a skillet.
- Stir contents of skillet and the rest of the ingredients
- together.
- Pour into a casserole and bake at 350 degrees F. for
- 45 minutes, until golden brown.
- Serve with sour cream.
